    I got a recipe for snack sticks off a post here (how I found this site) and in the smoking instructions it says 100 degrees for 8 hrs then raise temp to 170 and maintain until product reaches 160 internal. Isn't this too long in that 100 to 140 degree zone where "bad things can happen" or...

    question about chicken....

    A friend of mine has a couple of marinaded whole chickens (sea salt and pepper) that he wants to cold smoke. These birds already have enough salt in them for his tastes, so he was wondering if they could be cured with pink cure (prague powder). If so how much and how long?
