I know this is a "Smoking/grilling" forum, but has anyone attempted to make their own homemade liver sausage? I can't stand the smell or taste of cooked liver, but good homemade liver sausage is pretty hard to beat. If anyone has any experience, what is the difficulty and maybe a recipe would be...

A friend of mine has a couple of marinaded whole chickens (sea salt and pepper) that he wants to cold smoke. These birds already have enough salt in them for his tastes, so he was wondering if they could be cured with pink cure (prague powder). If so how much and how long?
What I use for loins and backstraps is a marinade, then throw them on the grill.
Here's the marinade I use.........it's excellent.
2/3 cup wine vinegar
1/2 cup catsup
4 Tbsp salad oil
4 Tbsp soy sauce
2 Tbsp worchestershire sauce
1 Tbsp dry mustard
1 tsp salt
1 tsp pepper
1 tsp garlic...
