Can I set the time and temp with the remote OR do,I need to set time and temp on the controller first and use the remote to check on the status of time left?
Just purchased MES 30 with window and remote 20070411. I am having trouble synching the remote with the controller. The remote occasionally works with the controller. Any tips on how to operate the remote or should i say get it to work so i can set the time and the temp.?

As i read for ideas about smoking a turkey i keep seeing references to a "danger zone". What is that about and is a 13.5 LB. turkey to big to smoke? What do i need to watch out for?

I purchased this smoker about 6 weeks ago from Lowes and have used it approximately 8 times. It has performed very well every single time and I am very pleased with it. I did read some negative reviews particularly about the control panel but that has not been the case with the one I purchased.
Today I smoked two salmon fillets on a plank at 180. They reached 145 in about 90 minutes. I was expecting about 4 hours. Did I do something wrong?
