    First Post.........in a while

This job thing is killing me lately. I haven’t posted any smokes in a while, but alas I was able to fire up the pellet pooper and throw a brisket on before I went to bed last night. I went deep into the smoke before I wrapped in butcher paper and I was rewarded with a very hearty bark. In fact...

    Recommendations for first smoker

+ 1 on the WSM. Hands down. You can add a temp controller and smoke while you sleep, lots of room, well made and a ton of assessories available.

Any negative to cutting brisket in half for smaller smoke?

I'll offer an alternative view here. When I first started smoking my smoker would not fit a whole brisket so I had to trim some off. I would look for a brisket that looked nice regardless of size and then cut off a good chunk of the flat portion. The reasoning is that I wanted to cook the flat...

    Sunday brisket!

Isn't she gorgeous! (in my best down under accent). I love the points but don't run across them by themselves too much. I talked to the butcher at one of my local grocery stores and most of the briskets are sold in their cryovac packs as whole packers and a few are separated and the flats are...

    Sealing Traeger door?

My Lil Tex was a scratch and dent special and had large gaps. I used a thin bead of RTV silicone but it is still not totally sealed and that is fine. Lots of folks use gasket or silicone but it’s likely not necessary for most pellet grills.

Brisket going on stickburbner and question

Looks good to me. Did you probe the point? That will always feel soft and tender be for the flat does.

I"M GETTING A NEW HIP FOR CHRISTMAS

Ha! Some hydrocodone and a beer make one helluva happy hour for sure! Glad you’re doing well. We tend to hear about the bad experiences with health care. It’s nice to hear about a good experience sometimes.

    Beef Ribs

1- Rub em 2- smoke em 3- eat em Seriously, they’re not that difficult. Put some rub on them or just salt-and-pepper then put them in your smoker and cook em until they’re nice and tender. I like em just before they start falling apart. Depending on wheather you get back ribs or short...

    Traeger: all smoke, no heat

My Traeger Lil Tex has a pellet dump shoot so it is easy for me to empty the hopper. Just open the shoot and collect the pellets in a bucket. I have 2 buckets with lids that fit tight that I use for this reason. I upgraded my controller to a Savannah Stoker PID controller. It was a drop in...

    Traeger Question

If you can get a good discount on the Treager Pro 34 it’s probably a no-Brainer. I have the lil Tex but I put in a PID controller in it. It works great and does what it does well. As for a grill, assuming you want for grilling steaks and the like, use a grill, gas, charcoal etc. Even if the...

I AM HOME ALREADY WITH MY NEW HIP UPDATE DAY 3

Wow! Holy crap, outpatient hip replacement? Did you know this going in? That is utterly fantastic. You will likely be a bit sore tomorrow. As nimrod said, take your pain meds regularly and heed the Dr.'s instructions. Glad thing went well.

    Traeger: all smoke, no heat

I vac out the burn pot before each smoke. Of course, long after the last use of the pit so as not to suck up embers.

    Most Automated Smoker Suggestions

Sarge mentioned the optimal setup, in my opinion, which is a Smokin-It type smoker run by an Auber Instruments PID controller. I have this set up for one of my rigs and hands down, it doesn't get any more hands off that that. I load it cold, add a couple small chunks of wood and have it...

    Traeger: all smoke, no heat

Sounds like it is the auger not getting the signal or something is causing the auger to advance too much during startup. It could also be the igniter not getting hot enough to fully ignite the pellets. Or a combination of both.
