    problem and possible solution

Slightly dampened sand, not soaked in a liquid. Have you tried adjust your bottom vents, if you have any bottom vents, try adjusting them a little, but keep your top vent open.

    problem and possible solution

Those would help maintain temps. Have you tried using sand instead of water in the pan? It takes longer to warmup, but it holds heat much better, but does not help with humidity. I think you'll have to try different methods to find your answer. It's all good my friend.

    Smoking and weight watchers

Portion control plays a big part in the diet game. If it has sogar, or some type of regular sweetener, you'l have to use less. This works for diabetics also. It's all good my friend.

    Do you heat your brine?

I have tried a cold brine and a heated one, to me there is a difference. The cold brine did not breakdown the spices as well. I now bring the brine to a boil, stir, and then take it off the burner. Yes, this does add time to the total process, but it works for me. It's all good my friend.

    problem and possible solution

    Best Charcoal?

I only use RO lump (USA), and these are the reasons. Very consistent burn, Little or no sparking, very little ash at the end of a burn. I combine RO with hardwood chunks for my smokes. I always find it at Wally World, and I buy 8-10 bags at a time It's all good my friend.

    GOSM Big Block

The small amount of smoke that leaks out usually won't effect the end product. One exception to this is if you are smoking in a cold outdoor environment, then it's more of a heat leak than a smoke leak, It's all good my friend.
