    nice score AK!!!  take that maple and make splits out of it, get rid of the bark and all that center stuff where the pith rotted out. save just the nice clean wood and season it for a few months minimum. you have some great smoking there buddy!

    i have to agree with bear on this one...  am a firm believer in how a quick clean kill and proper handling of game meat and how it leads to better tasting meat. you shouldnt have to mask the flavor of your venison.

    from what i see the best feature is that it remembers your settings even after its been shut off.... i know others have posted issues with transmitter/reciever range i have had no such problems.

    as long as you dont mess with the cure amount... and if you are doubling the meat then you need to double the cure...  for a first time recipie, why not make a tiny batch first. take you 5 lbs of pork, divide into four 1.25 lb segments and reduce ingreds to match... try out 4 different recipies...

Put them in a brown paper bag and i could start to smell them towards the end of the week so i knew it was time to give these abt's a shot...     have never smoked bologna yet.  waiting till i make some of my own instead of buying some. that said, that scored stuff sure looks pretty dont it. i think its worth it just for the presentation... we eat twice, actually the first time is with our eyes.
