Nice job on the ribs!!! A couple of suggestions for the new RECTEC. Use aluminum foil on the drip pan below the grates, it makes clean up real easy. Also coat the inside of the unit with some Pam spray, this will help any of the pellet ash stick and keep it from blowing around and getting on...

This is my go to recipe for venison jerky. I usually marinate for a minimum of 24 hrs
5 lbs meat
1/4 cup lite soy sauce
1/2 cup dark beer (guiness extra stout)
1/4 cup Allegro marinade "hot & spicy"
1 cup brown sugar
1 tablespn granulated garlic
1 tablespn gan onion powder
1 tsp cayenne
If you have your chip pan directly on top of the burner the chunks will catch fire. I have a smoke hollow 44 and the chip pan sits about 8" above the burner allowing it to smolder, if I get the temps up too high then they will catch
Very nice, you're gonna love the way it cooks. It's very efficient and hold temp well, almost no baby sitting. I know a lot of guys that use them in competition and almost always getting a call.
