    Pulled pork comp practice w/QView

Do you put sliced money muscle in your turn in box as well and if so do you remove it from the butt before it hits 195?

Went to my first KCBS event this past weekend.

The guys on the circuit are a great bunch more than willing to help out or answer questions....short of telling you what's in their rub or sauce.

    First Butt on wsm

Like Ritchie said seal the door, no need to buy a new one. I used 1/8" x 12" nomex gasket and that stopped it.

    REC-TEC...FIRST SMOKE!! GOOD!

Nice job on the ribs!!! A couple of suggestions for the new RECTEC. Use aluminum foil on the drip pan below the grates, it makes clean up real easy. Also coat the inside of the unit with some Pam spray, this will help any of the pellet ash stick and keep it from blowing around and getting on...

    BBQ Memories with Myron Mixon

I'm glad you had a good experience. Talk to the association and see what you can get for a pit. I know what you mean about charcoal and wood, I smoked on a gasser for years and thought it didn't get any better, I was wrong. I like the sprayer as well, thanks for sharing

    My Smokehouse

If you have your chip pan directly on top of the burner the chunks will catch fire. I have a smoke hollow 44 and the chip pan sits about 8" above the burner allowing it to smolder, if I get the temps up too high then they will catch

    Grate question for Uds

That would work. You could also insert rods through the side of the barrel and hang hooks off of that, removing the top grate of course

    Assassin 28

Very nice, you're gonna love the way it cooks. It's very efficient and hold temp well, almost no baby sitting. I know a lot of guys that use them in competition and almost always getting a call.

    BBQ Memories with Myron Mixon

I'm a KCBS judge and have met several other judges that have gone down and taken his class. Everyone raved about it and enjoyed their experience. If I were you just show up with an open mind and enjoy yourself. I met Myron at the Mohegan Sun BBQ contest and what a gentleman he is. Have Fun!!!

First turkey, in new Smokey Hollow 44"

Nice job on the turkey. I have the same smoker and love it. I replaced the water pan with a very large disposable aluminum foil pan and I can fill it with 2 gallons of water. This is key if you are going to do a long overnight cook...you can get almost 8 hours out of it. The only other mod was...
