Anyone own a smoker mfg UDS?

I don't have one but I really like the idea of the shield and block off plate. I assume that you have all the vents wide open at this point. How about trying a basket of Kingsford Blue, I usually run a combination of the blue & lump. Only other thing might be drilling the holes in the shield a...

    Rib Help

I personally cook my ribs at 250. I first start by rubbing a little yellow mustard and then add my rub. I usually put the ribs on after the rub has sat for about 15 minutes. Start out rib side down for 3 hours, spritzing with apple juice every hour. After 3 hours I wrap in foil, add brown sugar...

Have you ever been to a KCBS competition, almost half the teams today cook with one of these or a version of one and win with them. It's not the wand, it's the magician

    UDS Air Intakes

Do you think that there is advantage to having tall upright air intakes over a ball valves at the charcoal basket level other than having to bend over to make an adjustment. Common sense tell me that there would be a better air draw but I really don't know

    Stainless Steel Rib Racks

I have a Smoke Hollow Pro gasser that comes with a rib rack, I believe it fits 8 racks of ribs. I just checked on their website and you can buy them for $10, your Yoder would fit 2 racks on it. They also sell jerky racks. The only thing is that they are not ss, just chrome plated, but I have had...

I want to make a homemade smoker, and i have these stainless steel. Any ideas?

If you want to make a smoker start out with an ugly drum build. Very easy and not many tools required. Start to finish it will take you around 20 hours

    Problems with Brisket.

I smoke my briskets at 250 fat side down until it hits 160-170 then I wrap in butchers paper until it hits 205. You will get better results cooking a little hotter but at a constant temperature. I will trim the fat down to 1/4" thick
