    If you can get a solid 5-6 hours on the Weber kettle then just finish you brisket in the oven. There are no penalties for using the oven and you will still get that outstanding smoke flavor from cooking on coals.

    Also once the sausage reaches your desired internal temp, mine is usually 152 degrees, then you will want to "bloom" it. Rinse it in cold water to stop the cooking process.

    In the owners manual I believe it tells you how many pieces of charcoal to use, my guess is for a 3-4 hour cook it will be about 30 pieces, use the minion method and use a half of a chimney to start it. If you don't know what the minion method is then go to youtube

    I bought the same controller for my 22" WSM. What a game changer. I smoked 2 pork butts for 14 hours at 225 and the temps were rock solid. After pulling the butts off the smoker I was curious just how long it would go for at 225 and it lasted 20 hrs
