I think you'll get cleaner smoke in the MES (less creosote) by using some flex pipe from the mailbox to the MES like you do with your cold smoking setup. This will allow the smoke to cool a bit before entering the MES, which supposedly reduces creosote.

Fair enough - I should say that my girlfriend is home when I leave my pellet grill unattended. I've trained her on how to adjust temps, turn off, etc. I've never had to call her to adjust temps or anything, but if I notice any issues on the temps, I could have her check on it.

First - you should be able to have them send you the directions for the ignitor rod change-out. It isn't that complicated, but directions certainly help. Rec Tec has a youtube video out there - not sure if Chargriller does.

Depends on what temps you are running. You should see more from 180 to about 250, and significantly less when you run hotter (as the pellets are burning more efficiently the hotter you run it.
I think sometimes people use the word "brine" not really meaning it. A brine, by definition, is a strong salt solution typically used to cure meats. I see people saying they used a brine, when actually it was a marinade / flavor injection.
