Celebrate Downtown Okemos & Art Walk

I did have a pic of it as I put it on. Our Health inspector is great to work with, yes she has a job to do, but if you're nice so is she. If I can get a link to the interview I will post it. you'll be able to see the final product there.

Celebrate Downtown Okemos & Art Walk

For the past 4 years the Okemos Masonic Lodge has done a pig roast for the Art Walk. This year they combined the event with a live band, inflateables for the kids, many local shops came out to show themselves off.  This year I didn't do a whole pig but i did 12 butts (110lbs) instead. I...

    Dutch's "Wicked Baked Beans"

I just did the Q for the "Celebrate Downtown Okemos and Art Walk". As a side dish I used my version of your Wicked Baked Beans.  I sold out! Everyone loved them.  I had 19 people ask for the recipe.  I sold, we think, 211 people. I had a mention on the 11 o'clock news.  I think the beans are the...

Upcoming day at the track, looking for ideas & advice

Kind of cars.. fast ones.  3 lotus's, several Corvette Z06's, 2 WRX STI's, a GT40, many hand built cars, an old Austin Healey, and many more.   I made the Fatties for breakfast.  I smoked them a day early and chilled them.  When we got there we set up  a gas grill (no open flames at the track)...

Upcoming day at the track, looking for ideas & advice

This coming Saturday is a test & tune day at Gingerman Speedway.  A buddy of mine has a couple of high proformance cars and is going there with a group of 'racers' and asked me to do some food for them.  Probably about 25 people or so.  They have to get there early, and I will too.  I doubt the...

    Mirage Hot Sauce

I blended all the peppers in water, straining between batches and reusing the water.  I reused the water for each batch then added it to the sauce, I bet the water would have made a great bloody mary mix, but I added it to the sauce.  then I cooked the blended beppers and apples.  after I added...

    Mirage Hot Sauce

Al, I've done enough other sauces in the past I knew what I was going for.  I kept track of everything by weight so I can duplicate it later.  You're right, for the most part I just cooked and blended a bunch of stuff, but thats how some great recipe's are created.

    Mirage Hot Sauce

I ran it through the blender for the 2nd time then let it cool.  Bottled it up and put some in the fridge.  I tried it this morning on a plain pork rine and loved the flavor.  It came out sweeter than I wanted but I like it. I ended up yielding about 2 1/2 gallons. Im going to start another...

    Mirage Hot Sauce

I've been wanting to make a batch of homemade hot sauce so I went to the Farmers Market to see what was there.  I found a guy that had a mix of peppers sitting in a bowl.  I offered him a few bucks for the lot of it.  It turned out to be just over 5 pounds of them.  There was jalapenos...
