That sounds like a good idea. I have a bag of venison hearts & livers that I'm planning on turning into a 'frankenwurst', but you may have changed my direction in this. Keep us posted on how they turn out!

It's truely a sad day at SMF. He has offered great advice and support for such a long time. He will be missed. Locally when someone passes I smoke their family a turkey, I always keep some on hand. I will get one thawing asap and smoke one in his honor tomorrow night.
Our Masonic Lodge has a few of us that have a passon for meat. I smoke, Dan does Gourmet Wild Game and we just started a Blue Smoke Cooking Crew. We havent done anything that large yet. Good on' ya

Nice idea, keep us posted on how it goes. I haven't tried a fish fatty but I have made cajun fish sausage and that worked great. Maybe a ground fish sausage wrapped in something like corn husks or sliced eggplant would work.
