    Pastrami looks great. Gotta love making meat so you know what's in it. Wow, a 6 day brine? Seems long, but I'll try it sometime.

    Curleys does a great job, has a good varity. The ground and formed bacon is GREAT! Highly recomend it.

    A Great Man Has Passed Away

    It's truely a sad day at SMF. He has offered great advice and support for such a long time. He will be missed.  Locally when someone passes I smoke their family a turkey, I always keep some on hand. I will get one thawing asap and smoke one in his honor tomorrow night.

    Nice idea, keep us posted on how it goes.  I haven't tried a fish fatty but I have made cajun fish sausage and that worked great. Maybe a ground fish sausage wrapped in something like corn husks or sliced eggplant would work.
