    In the smoker today

Those pics look great! Choc. Was the habanero pieces in the ABT too much, or do you like it like that?

    Sale on brisket at GFS.

I was in the Rochester location about 2 weeks ago, and they had like seven or eight briskets for sale at that price. Maybe that location sees slower movement of briskets?

    Favorite brisket recipes

Salt, Pepper, onion, garlic will give you a more "classic beef" savory flavor profile, but adding brown sugar and paprika will being it closer to a mainstream BBQ flavor. Also, if it's a big brisket, don't be shy with the seasonings, really lay it on. Also try mesquite wood if you have it. It's...

Fall apart on the grates butts.

Yup. It really starts falling apart when you climb past 202, but as long as it's not mushy, your golden!

    Largest Brisket

Not if you want lots of bark. However 24 hours is a long time and a bark cooked like that might be more than you bargained for, so maybe do a light spritz with a spray bottle every 2 or 3 hours. Feel it to see if it's where you like. If it's not getting crusty enough stop spritzing, if it is...
