    Got a few kings, coho, and steelhead this week, so I fired up the camp chef. Simple brine. Be sugar, salt, and dales. Smoked a while at 160 then finished at 195. Mopped every half hr with apple juice, honey, molasses and be sugar. Not too shabby.

    Made the boy a dozen sliders on the blackstone. Re hydrated onions in beef broth, then steamed the patties. Used the little kings sweet buns. Not a fan of the sweet buns, use something different next time.

    Put my frozen turkey in a brine yesterday to thaw/brine.Thought it would take longer to thaw, it was in the basement, but checked this morning and brine temp was 58 and the breast of the bird was 48. Set it out side in the cold. pitch it and start over?

    here's my twist on a recipe i got from this site. follow the recipe EXCEPT, omit the SUGAR and add: 1 cup shredded pepper cheese, 1 tablespoon red pepper flakes, 1 tablespoon cayenne pepper, and 3 jalapenos seeded and chopped. Here is the Recipe: 2 Boxes of Jiffy Corn Muffin Mix (8.5 oz each)...

    Biggest cook I have done (70 people). Did pulled pork, Mexican cornbread, beans, and mac n cheese. Everything turned out excellent. The party was a HUGE success. Started drinking too early and forgot to get pics of the finished products. Thx for looking.

    Mac n cheese for 50....Help.

    Doing mac n cheese for 50 this Saturday. Took my regular recipe x 6. My question is do I need to make my sauce/roux in small batchs or can I do it all at once in a large stock pot, thx. Just put 2 1/2 trays of beans in the smoker, to be reheated at the party.
