Subscribed, because I bought a Jacuzzi the other day and the dealer, who also happens to be a BGE dealer, threw in an Egg as part of "negotiations". I happened to name drop a friend's name who is a massive Egghead and buys all his stuff from this store, and all of the sudden I found myself...
You're going to want to do something to supplement the MES's base smoke generator, which almost everyone feels is inadequate. The next time I smoke salmon I'm going to try reverting to it just to see if it works for that since it's such a short smoke time compared to say a pork butt or a...
ugh, I hate these things. I have a stink bug 'problem' in my office at work! Every so often one crawls on to me while I'm sitting there working.
I don't have them around the house but at this time of year I have Japanese beetles all over the rear patio including near and on the smoker when...
Nice work chief. I learned my lesson with pork butt and never cook it anymore hoping to serve it for any one meal... I just cook it till it's done and we have it at the 'next available' meal time (except breakfast).

Smoked it...
Went to Kroger today and saw they had bourbon glazed filets pre-made so I figured "why not?" This is my first attempt at doing salmon in an MES 30".
Set the smoker to 210 and loaded my cold smoke attachment with oak whiskey barrel chips
Aiming for IT of about 145.

My cold smoker has caught fire several times when I opened it to put more chips in. One time there was like a jet of flame shooting out the top, which I thought was awesome (guess I'm a pyro). Anyway, hasn't caused any problems and the unit has been great so far.
I always leave the vent on my MES fully open now, which is working fine for me. It's a good thing to because at this point it's jammed open and I'll need to give it a good cleaning to fix that.
I have an MES 30 (2nd gen) and a Maverick and I've found that the internal thermometer of the MES, at least in my case, is pretty dang accurate. Seems like not everyone has that experience, but it's been mine.
