Here's my 2nd official smoke. This time I am smoking eggs again, hopefully better than last time, but I am also smoking some peppers. Not ABT's, but the whole peppers. I have some habeneros and some jalapenos. I really like to make my own pepper vinegar, so I decided to try it with the peppers...
I did mine for about 3 hours @ 225 degrees, but I found them to be a bit overcooked. I'm going to try another batch tomorrow and I'm going to smoke them for about 2 hours at the same temp and see what the difference is.
Okay, it seems I learned a small lesson first time out. The eggs smoked wery well, but as you can see from the yolks I overcooked them. They are very edible and the smoke gives them a very unique taste which I enjoy. I think I could cut the smoking time down to 2 hours as opposed to 3. We'll...

I'll take some additional photos. I was curing the inside at the time of the photos, so I couldn't do much else. The wire you see is a propane line. I use a modified propane burner and a homemade short stainless steel pot in which I put the wood. I believe it will work, but like I said I'm a...
Thanks for the warm welcome. I was hoping there was a great bunch of people here. Also glad to see some members from my home state. As soon as I can I'll get started doing some smoking and posting photos.
My name is Louis and I live in Southwest Louisiana. I been BBQing for some time and dabbled a little with smoke, but I wanted to have the ability to do more than throw some wood on my charcoal in my bbq pit as an afterthought, so I decided to have a smoker built. As we speak, I am seasoning...
