I'm down in Cincinnati, and I found some of my wood from Craigslist. I found one guy who had cherry wood and another who was selling a bunch of red oak (this was earlier in the year). I would suggest scanning Craigslist for folks who are selling firewood and are calling-out what type of wood...
I did the same for my coworkers back in October - spent 10 hours on a Saturday smoking 2 pork shoulders and a brisket for a work get-together. Well worth it to show my appreciation for the folks I work with.
Great, thanks. I like the flavor of hickory as well. Its my favorite wood, hence my name. But since I will have a whole truckload of pecan, I will be using a lot of it - which is why I was curious if you use it throughout a long smoke if it would be too strong. Hickory would do that.
I'm a...
Thanks. I've read plenty of threads on here about different woods, and I've seen the other threads on pecan wood. Just a lot to sort through and I was looking for answers specifically on experiences with smoking with pecan during an entire cook for say a pork shoulder and if it gets too smokey.
Looks great so far. Can't wait to see the continued progress.
I've wanted to build a brick smoker and also a brick pizza oven, but will likely wait until we move to a place with a little more land and where I know we'll be for the long run.
I like your cherry wood pile!
I know there is probably a thread on this topic already, but figured I would start a new one and list several questions for those with experience smoking with pecan wood.
I've used pecan sparingly from a couple of WesternWoods bundle packs I bought at Academy Sports. I always mixed the pecan...
One other link below I thought I would share. If you haven't read this thread, it's great. Details each type of primary smoking wood and the different flavor profiles associated with each, and which meats go well with which woods. As i said above, I always thought cherry was on the mild...
I didn't mean to make it sound like rocket science. But just wanted to let you know that there may be some trial and error. I actually think a pork butt is great to learn on because it is very forgiving - plenty of fat. You can also pick up some chicken leg quarters and learn on those - they...
Also, have you ever burned just straight wood (stickburning) in your offset instead of charcoal? If not, you may be in for a learning curve which could take a couple of rounds, but boy is it a fun thing to learn. And once you learn how to master a fire in YOUR pit, you will gain a whole new...
I have found hickory and pecan to be stronger than cherry.... At least from my experiences. I have a bunch of cherry (well did at least. it is continuing to dwindle down). I don't really change my rubs based on what kind of wood I use, but I will change my wood mix for different kinds of...
