Nice work, that's how I've always cooked my corn. Learned that way working at the MN State Fair corn roast stand as my first job. Usually grill them on high heat until charred, usually 10 min. Works on lower temps of course, just add more time.
Thanks for all your responses. Can't always post our victories. Sometimes you win and sometimes you learn. And by posting my failure I learned a lot.
Next time I will go straight from the freezer and do a temp of 131° or higher. I got Baldwins chart saved now.
I like your setup. Utilizing your shelving and catching all that liquid gold. Looks mighty fine from here. Just reminded me, I need to restock my freezer with pulled pork.
Another vote for Recteq. I've owned my Trailblazer 340 for 5 trouble-free years. Don't let the size fool ya, can fit plenty for a family or a party. Plenty of smoke profile. My BIL has a Pitboss and has to use a blankie to keep it warm in the winter. My Recteq had no problem smoking 2 pork butts...
Lots of good info on this thread. I use a combination of the above. Use baking powder with rub of choice then on pellet smoker @ 250° for 30 min then crank it up to 425° to finish until crispy. Usually 60 min cook time total. Then I toss 'em in the Franks sauce!
I'm gonna have to try corn starch...
Trying out my new Inkbird sous vide today for the first time. Which overall, I'm very impressed with. I had some New York strips preseasoned with Montreal steak sealed and in the freezer. I let them thaw overnight in the fridge. SV for 3 hours @ 128° and then seared on hot gas grill for a few...
Wife and kid were out of town for the night. I was feeling too lazy to do the vortex on the Weber for just 10 chicken wings. So I decided to pull out the Recteq.
I season my wings with a 2:1 ratio of rub and baking powder. I choose Famous Daves Chicken Rub for this session. 2 tbls rub and 1...
Blowing smoke just north of the Twin Cities. Finally decided to join. Been browsing for years. Lots of great info I've learned here. Been smoking meats for about 7 years now. Started with a vertical propane smoker. Struggled to maintain consistent temps. Bought my Recteq Trailblazer in fall of...
