I use Cherry Coke to marinate duck breasts before smoking. Cherry Coke, cherry jam, Dijon mustard, soy sauce, HP sauce and balsamic vinegar. Cover duck breasts and leave overnight in the fridge.
Maybe because he already has a gas BBQ, a straight smoker might be the way to go. I have a Traeger 075 with the optional cold smoker accessory and absolutely love it. There are some pretty good deals on their website this Black Friday Weekend and I'm sure they will be repeated before Christmas...
Some great information here. I just hope that Noboundaries post means that we need a degree in chemical engineering to be really successful at this smoking game. Having said that, I can't believe how well some of my efforts have turned out using just blind luck and common sense.
Good to see you here, Bubba. Good luck with your smoking endeavors!
The comments above have got you started in the right direction in your selection. Amazon also has a whole bunch listed in their BBQ/Smoking cookbook section. Be sure to look in some of the BBQ books because they will also have...
I hope you enjoy your Traeger Texas grill as much as I do mine. I added the Cold Smoker box onto it and am having a ball with the added flexibility it has given me. Good luck and I'll watch for your posts.
Ufert, I have better luck with pork butts - generally larger pieces of meat and less expensive. I did two 8-lb butts last week on my Traeger and they were brilliant.
One thing about a Traeger Grill that I have experienced is that when you put the control on 'smoke' it will smoke. But, that may not be an indication that the auger is actually feeding pellets into the burner. When you are considering a used unit, please be sure to run the unit long enough to...
It should never be about TIME, it should be about TEMPERATURE! After the meat reaches the proper temperature, it can be kept warm for several hours wrapped in a heavy towel and put in a cooler.
No fooling, Red.
I can't say enough about the great folks I have met in the Customer Service Department at Traeger - especially the guys that talked me through the auger freeze-up problem I had when I bought my used (older) 075 unit. They directed me to a great video on the web that walked me...
Hey Brian - nice purchase, congratulations.
Does your 075 have the rectangular pellet hopper or the older round one? If it is round, then it won't need the drip bucket. Also, be careful if you buy the lower shelf and the folding front shelf because they won't fit. The problem is that the legs...
What are you using for a meat thermometer and interior thermometer? The analog thermometer on my Traeger Texas registers at least 30 degrees high when compared to the digital setting thermometer on the pellet hopper or my Maverick ET 732.
I'm sure your local Health Department would be all over you unless you had a properly certified 'commercial' kitchen. My partner used to work in a bookstore/coffee shop and would proof then bake frozen croissants at home that would then be sold at the store. Well, that did fly for very long!
One solution to the pellets hanging up in the hopper is to cut both ends out of a large coffee can and use it as a vertical pellet hopper. Just set it in the hopper over the auger. A piece of 6" or 8" stove pipe would work as well.
Congratulations on your Traeger purchase - even though you've had some trouble right out of the box. Once that's square away, I know you'll love your Traeger. There doesn't seem to be many Traeger lovers here so I really enjoy speaking up in support.
Having said all of that, one word regarding...
