    hog sausage

    Going tomorrow to kill some hogs. Planning on some smoked sausage. Any ideas? I also have some course ground axis deer meat from an axis deer I killed last week. Since I'm going to heat up the smoker was going to thaw it out and stuff some sausage with it also. Thanks for any ideas.

    I am from simonton tx. Its a little west of Houston. I use a homemade smoker. I mostly smoke using pecan wood cause I have an abundance of it. I am looking forward to sharing ideas with everyone
