I started started out with Pops recipe and also wanted it spicier. I just kept adding more pepper flakes, cayenne and sage to each new batch until I got it where I wanted it. It's still in my notebook as "Pops Breakfast Sausage".
When I first became interested in making sausage I read a similar post and didn't even try to use my grinder to stuff with. Went straight to the 5# Lem. No regrets and my wife still loves me!
My MES 40 had an "issue" when I first got it. Masterbuilt fixed me up right away. I've never used the chip tray for smoke just an AMNPS. The only time that it went out before it burned all of the pellets was when I had forgotten to open the chip tray to let air in...oooops, my bad!
Hey Everyone, I made up 15lbs. of Hungarian Smoked Paprika Sausage from Rytek Kutas book. The fry test was so good that I ended up doing 5lbs. cooked in a pan with a little red wine. I'll put the rest in the smoker in the morning. Hey a change is as good as a vacation. Sorry about not having...

I can't believe that you guys are telling jokes when I have to go to my wife's funeral today. She is the fourth wife that I have buried in the last fifteen years. The first three died from eating poison mushrooms. This one died from a busted skull........She just wouldn't eat her mushrooms!!! ...
Hey Was, good morning. I've used those and they work just fine. Just soak 'em in warm water for 30 minutes before you plan to use them. If you don't use them all up just put them in a jar and cover them with salt. Keep them in the fridge and they will stay good for a long time. Hope this helps...

Greetings J, put both of the probes in boiling water and see what they read, then try ice water. That should give you a pretty good idea on the difference between the two. Hope this helps.
I do pulled pork and brisket in the crock pot all the time. Just finish it off in a skillet and add the spices, onions, etc. then. Haven't had any complaints so far!
The best price around here is the "case" price at Sam's for $1.34. I was getting them on sale several times a year for $0.87 but not for the last six months. the only good sale has been whole chicken for $0.77. If anyone is interested, Scarbelly's "Chicken, Mango, Jalapeno" sausage is great stuff!
