    I could only retain 190 degrees so I took it out of the wsm, IT temp was only 160, put in the oven at 300 to finish, it's at 190 IT temp right now, should I take it out to rest?

    Thank you, just smoked my fist chicken wings on my wsm, came out a lil crispy , I should of just dumped my loaded chimney in my basket with no unlit coals

    Smoking them now 2 grates full, I loaded a 3/4 chimney on unlit Kingsford blue with 3 apple chunks, dome reads 250 and lower grate reads 343 with all vents almost closed
