    Smoking fish on the traeger

Going to be attempting to smoke a bit of steelhead I picked up at Costco as an experiment. Traeger only goes as low as 165 so I'm not going to be able to go super low on the temp. I was thinking maybe 2 hours of cold smoke before getting the traeger going. Looking for some advice since I can't...

Coffee Grinder To Make Pellet Dust

I'm looking at making dust to put in my tube and found this post. I've got I'm pretty sure the exact same grinder as you had at this point. How long did it last before it burnt out or did you find an alternative method that worked better?

Cold smoking pork belly and pork loin - curious about how long?

I've got a Traeger 870 so I figure I'll put the tube on the far right and I'll have the loin section on the left edge since it's thicker than the belly and the left edge is the hottest zone when it's running. going to throw some cheese on the smaller rack that runs across the top

Cold smoking pork belly and pork loin - curious about how long?

I stopped at an Ace on the way home from some errands and picked up some small maple wood chips to see how those do. I've got apple and I think bourbon barrel (oak?) pellets in my bins right now.

Cold smoking pork belly and pork loin - curious about how long?

I finished up curing my pork belly and pork loin this morning, I've got them soaked/rinsed so that the salt content is fine. Pork belly was dry equilibrium brine and the loin was a wet equilibrium brine and they were in there about 3 weeks. Curious as to ya'lls recommendations on smoke time...

Smoking my first brisket this weekend, I've got a couple different pellets to choose from - what would be your pick?

Brisket trimmed (It's not stellar I know, but I also now know I really need to invest in some better knives for trimming). Starting weight from the costco package was 13.9lbs end weight on my scale was 10.2lbs. Choice grade brisket. Just after midnight it's on the smoker and since I had to go to...

Smoking my first brisket this weekend, I've got a couple different pellets to choose from - what would be your pick?

As the title says I'm smoking my first brisket this weekend and I have 3 different buckets of pellets at the moment. Bear Mountain Bourbon barrel pellets, Pit boss apple, and pit boss fall blend (apple and pecan). Curious which one I should use for the brisket.

    First attempt at smoking cheese

I admit to being a little biased as I'm a bit under 2 hrs myself, next time I'm out that way I plan on getting some of their more diverse stock at the creamery.

    First attempt at smoking cheese

I'll try that next time, think a cooler would be sufficient in place of a fridge? Pretty sure the missus would get upset if I made the whole fridge smell like smoke.

    First attempt at smoking cheese

First attempt at smoking cheese was Thursday night. Took 2.5 lb blocks of Tillamook Medium Cheddar, Sharp Cheddar, and Pepper Jack quartered them and let them smoke for 3hrs (used a smoking tube) with apple pellets. Vacu-sealed and letting them do their thing for a week or so. Right after...

    Smoking Cheese for Gifts

Hey neighbor. I've been looking into doing some smoked cheese for the family and I was wondering what pellets/kind of wood you're using for the smoke?

    Ham done too soon

I kept it wrapped up and put it in the roasting pan on a rack with a bit of water in the bottom. Took about 3 hrs with the first half at 300, the next hour at 250 and the last 3 i unwrapped and threw on a bit of a glaze. I unwrapped a couple layers and probed thru the first layer of foil at...

    Ham done too soon

I've got it wrapped up pretty tight with multiple layers of foil and it's in the fridge now on a rack in a cookie sheet. Thanks for the recommendations! I'll consider slicing off a section and warming just that up since it'll be easier. Given that the oven is going to be rather occupied I'll...

    Someguyonaroof in Oregon checking in

Hello from the PNW, I've got about a dozen chicken appendage smoking sessions and a couple of smoke sessions doing pork shoulders that have successfully turned into pulled pork. I'm on a loaner traeger at the moment (older unit) and some day home to have my own pellet smoker because I love this...

    Ham done too soon

Hello, I'm relatively new to smoking (I've smoked a couple shoulders for pulled pork and a good number of chicken wings and thighs) and this is the first project that was hard to pin down. I've got a 22lb pork leg that I cured and from what I could find online (vast as it is) I was looking at a...
