    Awesome. thanks for the tips! regarding the wood, you said "I watch my smoker and can tell by looking when a chunk of wood needs to be added." I guess I'm still trying to figure out what that actually looks like. ;D When you're doing a smoke Whistlepig, what does that mean for you?

    Thanks Mike- yeah, my wife is the same way. I just dont understand it. Like, she's a full on well done kinda' girl. I was trying to figure out how to accommodate her, but sounds like just carve a slice and put it back on. do you worry about drying it out? Thanks for the info!
