    New sausage stuffer

I've been using a 7lb Hakka vertical for the last 6-7 yrs. No complaints other than the usual quantity of meat left in the elbow. I recently picked up a 11 lb horizontal (Hakka again) and like it much better. Other than just a very small amount of meat left in when done it seems easier to...

    Chamber Vacuum Sealer?

Here's the vid that Winter mentioned. You can seal large items outside the chamber vac but you have to use textured bag material. I've vac sealed ribs out side the chamber a few times and just did a couple of long Summer Sausages the other night to finish sous vide. You can use chamber vac bags...

new knife sharpener for touch ups

I have the Worksharp but use an Idahone for quick touch ups. I brought it to work years ago and showed the guys how well it works and a couple weeks later it seemed like everybody had one. https://idahoners.com/products/four-rod-v-sharpener-with-hand-guard-and-storage?variant=33614655651978

    Chamber Vacuum Sealer?

I've got an Avid Armor Ultra also and wish I would have went this way years ago. You can vac and seal large items outside the chamber so you're not restricted in any way. They've got a good sale going on the USV20 right now.

    Chamber Vac Sealer

I picked up the AA USV20 last winter and so far have probably vacced 100 lb plus of various things. The bags are MUCH cheaper than the Foodsaver type textured bags and there's a huge variety to choose from. They add a year to the warranty just for you posting a review. For anything too large to...

That building covers over 7 acres and is the biggest wooden clear span structure in the world. The one that burnt down was full of hay at the time and living 7 miles to the north I thought the whole town of Tillamook had to have been on fire. It lit up the whole southern sky.

    How do YOU make coffee?

That's what I've been using for the last 7+ years. I replaced the gasket a few months ago and it'll likely go another 7 yrs.

    Fry Sauce?

The Artic Circle guy is credited with inventing it. We use it for dipping fresh cracked Dungeness in, besides french fries, chicken nuggets, and on hamburgers, fish, etc. "Don Carlos Edwards ran a food cart in Salt Lake City in the 1940’s and is credited with serving up the first fry sauce. He...

    The creeping crud

Thanks! I have an oximeter that I check o2 with, if things don't feel right. It normally runs at 93-94 but checked as I was feeling a little woozy. Ran into the EMT that got me into the ambulance and he said he saw it as low as 74. Saw the doctor today and she said we'll give it another 4-6...

    The creeping crud

I've had mild/moderate COPD for 6-8 yrs. No problems, doing 2 mile walks almost everyday. Middle of last month started feeling like I had the sniffles, which has been no big deal over the years. Until 3 or 4 days into it when my o2 dropped down to 82 % and lower. Long story short, I had RSV...

    Electric suggestion?

Wired the way the diagram shows, with the rocker switch you can use either the analog controller or use the PID controller which will allow the higher temps. No need to bypass the analog dial and then if something goes wrong with either controller you have the option to switch to the other.

Cut the cord, anyone else ?

I'd been using ROKU boxes for 7-8 yrs then switched to Apple TV 4K last year. Sharing Disney+ (Disney, AMC, Hulu, Nat Geo, and ESPN) with a family member and have Paramount+ thru my Walmart+ sub. The Apple box also has 2 local news streams. I'm in a dead spot for OTA otherwise I'd have an...

    Video games?

I had a strained flexor muscle after a 3-4 hr stretch of Borderlands 3 last week. Took a couple nights off and its fine now. You know you're old when you hurt yourself playing a video game!

Is Amazon Prime still a good deal ?

I'd been an Amazon user clear back to when they only sold books but a few months ago I decided Prime wasn't worth the expense and frustration. Deliveries being made days if not weeks late, trying to speak to an actual human in CS, etc. I switched to Walmart+ for $13 monthly. So far all my...

    Electric suggestion?

One thing to consider regarding the Smokin-It models with the integral PID controllers is that if something goes wrong with the controller in the middle of a smoke, you're dead in the water. Buying the analog version and adding a PID gives you the option of using the analog controller if you...

    The BBQ Gun Thread

Thats an '82 39A I had that I swapped the wood out for a Century Limited stock and fore end I found on Numrich Arms site. I think I paid $90 for both pieces. They sold out yrs ago and I've seen a few nicer than mine and a lot more not as nice. It was just the luck of the draw. One of these days...

    The BBQ Gun Thread

No, the Special was put together using a refinished USGI receiver and parts along with a new Cririterion 308 bbl and IIRC a Boyds walnut stock. I'll get around to swapping out the clunky stock one of these days. They don't build them anymore, as far as I know, I think due to a higher price point...

What a painful experience, KitchenAid sausage stuffer, what a PITA, looking for suggestions.

I use the 7lb Hakka that Tallbm posted. It holds about 6 lbs. Wooden dowels to get whats left in the stuffing tubes and run that and whats left in the elbow thru a jerky gun. Get a set of bottle brushes for cleaning the tubes also.
