    there is a place called Ontario gas barbeque in Vaughn or Concord. They sell the Amazen tube and tray smokers. Not sure what the shipping charges are though.

    Love trout on the grill. During the winter time, it's pretty much the only fish we eat. Have a few good spots where we can pull up some nice grilling size fish through the ice. Those look really good. Nice job

    Sorry, got busy last few days. Here are the results Used pecan and cherry to cold smoke. 2 smokes at 12 hrs each thanks to the AMNPS Then sliced some up for tastin Split what I had smoked up, and put 1/2 back in the smoker to bring up to 145* Still have a couple more chunks to cold...

    Does injecting make a difference?

    I do inject when the mood strikes. Haven't noticed a difference in moisture, but I do like the ability to have another flavour profile inside the meat.

    Thanks Dave, that's good to know. Woke up at 2:30 this morning and decided to check on it. Looks like my pellets went out just after tucking in for the night, right where the tray goes around the corner for the next row. Got it re-lit and now has been going for another 4 hrs...will be pulling it...

    Have to agree. The last 3 times I have done chicken , I have stayed away from the brines. Best chicken I have ever had.
