    Smoked Turkey Breasts

I figured somewhere in the range of 225 - 250. Can go lower or higher if that's what is recommended.

    Smoked Turkey Breasts

Awright, it's time to try something new. I've smoked turkey thighs with great success, a friend wants me to try turkey breasts. Has anyone ever smoked turkey breasts? I have a MES 30. Since the breasts are a drier meat than thighs, which is why I like thighs, I am sure a liquid needs to be used...

Hickory Chips and Baby Back Ribs

The ribs sit on the counter for an hour warming up, while the MES warms up to 250 degrees. I use a dry rub seasoning, consisting of: Salt, Pepper, Seasoned Salt, Chili Powder, Garlic Powder and Paprika.  The wood chips are put in the same time I put the ribs on. After an hour, more chips are put...

Hickory Chips and Baby Back Ribs

Awright, I have a question. I have a MES 30" smoker. This past weekend I cooked some baby backs using Hickory chips, and the ends of the ribs turned very dark, darker than normal, almost black. I did not change anything in the process of preparation, seasoning or cooking.  Even though they...

    Turkey thighs - yum

Smoked some turkey thighs on my MES 30. Used 2 different seasonings (3 each), and a Shiner Bock (yes, I'm from Texas) in the water pan. Cooked them for 4 hours at 275 degrees.

Decided to smoke some turkey thighs on my MES 30. I did not brine them. Used two different seasonings (3 each), and a Shiner Bock (yes, I do live in Texas!), in the water pan. Cooked 'em at 275 for 4 hours. They are incredibly moist, and YES, they taste as good as they look!

    Cleaning a MES

Thanks, I do put tin foil over the grease and water pan, and I clean the grates, water and grease pans after each use only because my wife is somewhat of a germaphobe. Our sheltie princess likes the smell of the grease drip tube in the back of the smoker. She doesn't lick it but stops and...

    Cleaning a MES

Ok, I've heard pros and cons of cleaning an electric smoker, so I thought I'd ask the experts. Since I've gotten my MES, I've cooked several racks off pork and beef ribs, a couple of chickens, as well as other tasty treats. Should I clean my MES smoker, or not? If so, any product...

    Chinquapin Oak for smoking

Hi y'all. Has anybody ever used chinquapin oak for smoking? If not, is there some reason it couldn't/shouldn't be used? If it has been used, what should I expect, flavor-wise? Any other information would be greatly appreciated. Thanks.

    Smoking Turkey Thighs - Questions

I like equal parts salt, course ground black pepper, paprika and brown sugar. Sometimes I throw some chili powder or red pepper flakes in for grins. Also use a dark beer such as Shiner Bock in the water pan. Depending on number of turkey thighs and size (I've had some that look like they came...

Please forgive my ignorance, but is an AMNPS? I am really looking forward to getting and using the new smoker. Thanks for all of your help.

MES Generation Number Recognition Pictures & Info (Digital Units)

Thanks greatly for all of the information. From what I've read, there is no reason to worry about lava rocks or ceramic briquettes. The Brinkmann smoker was a single-walled rolled steel that experienced a large amount of heat loss on cold days. I'm really looking forward to using a much better...

    Master built 30" electric smoker

My Brinkmann electric smoker (the orange bullet) died (yea) and my wife has said she'd get me a better one for my birthday (lucky me!) I have been looking at a Masterbuilt Electric smoker 20070213 or 20070215, and would like to hear some opinions about these two smokers I know the 15 is...
