Well, my smoker came in a couple weeks ago. Preseasoned and broke it in the first chance I had. 5 lb pork butt for 3.5 hours unwrapped at 250F to an internal temp of 165, and then another 4.5 hours wrapped at about 225F to internal temp 205.
