i think alot of the reasons you see them with the pans in the competition cooking is from a clean up stand point the cookes stay alot cleaner when your not having the drippings going down into the cooker.
i usually take mine to about 190 - 195 no foiling till i pull them and they are usually...
we've done this plenty of times and it works just fine, maybe add some apple juice to have some extra moisture cover real good with foil and it'll be fine.
thanks for the replies it is a covere deck and i keep a cover over the smoker as well, really it's the freezing or near freezing temps i was worried about in the winter..i may look at removel for those times.
all of the above!!! and as you get better and try more techniques, some of these ideas you'll keep some you'll improve on yourself....my piece of advice....get a notebook or journal for nothing but smoking, recipes for rubs you try and note what you did or didn't like about them,on your smokes...
i saw in another thread where it's recommended to remove the mes controller if the unit stays outside, when it's raining or really cold. mine is under a covered deck and i keep a cover over it as well. what is involved in taking this controller off and unhooking it,and does anyone actually do this?
you may have answered your own question, when you said boneless.... the bone helps in the cooking process..if all the themometers are on and close this maybe your problem try a bone in and see what it takes. my two cents worth anyway.
welcome aboard kim,ron has said much about your service and knowledge with mes as well as others here have. i know i love mine!! glad to hear you'll be smoking more hate to see ya gone from masterbuilt though.
it'll work fine, years ago when i graduated from a bullet smoker to a chargriller ,the first one didn't have a sfb and i cooked plenty of turkeys and butts in it that way. it'll run a little hotter cause the fire and all is right there but it'll do fine.
one quick word of caution, the side burner on my gasser has holes around the bottom so if yours is on a deck be sure you have your grill mats down under otherwise as charcoal starts going it can drop through those openings, and maybe blow away from the mat. that said i use this method some times...
good topic here i did six slabs saturday ,and have done more i don't seem to have a recovery problem with mine and it's the 40" ss model.i do preheat about an hour and use hot water to start, and after that it's no problem,i do not run an extension cord at all, cause there is a plug right by...
i have an electric remmington and it does a great job i don't do any real heavy cutting but i have dropped several persimmon trees in the yard about 7-9" around and that's a pretty tough cut. but for small jobs it works great, of course the limitations are ya need to be close to a plug. also for...
good question and alot of it is a matter of your own taste . but anyone can take a kcbs judging class and become certified to their standards,my wife and i went and are both certified, and it gives you a real insite as to what competition bar-b-q is judged by. that said your right most people...
i have a 40" mes that i love. what type of insulation is used in these? and are most insulations fire proof? i was looking at maybe using sometype of insulation to add to gosm that i'm working on and was curious as to if there is a specific type that won't melt or burn. any help wold be great...
ron me and my wife had a guy tell us about these about 6 months ago when we were in wally world looking at meat. we picked up a pack and have been hooked, we now buy them all the time to grill,i do a spice rub, also i have done them in a cast iron grill pan and finished in the oven.they are a...
i don't inject mine just rub and low and slow, there are plenty that do inject and i'm sure it's good also but i usually cook at least 8 or 9 at a time
and i just do a rub and mine are great as well. time is relevant to temps that you cook at,so rely on your thermometer till you've done enough...
