Loss of charcoal while starting a chimney has bothered me also. I have begun heating my briquettes with a propane torch while they are in the smoker. They take a little longer to get going but all the heat goes to my smoker. I do have a horizontal smoker, not a vertical.
Hi There, I too am from Colorado in the Ken Caryl area of far west Denver at 5800 ft. elevation. My smoker is a small 14 year old offset charcoal by New Braunfels. You will turn out some amazing BBQ here. It seems to me that smoking works differently that it did in Houston. I suspect the...
Small aside. I have a standard size chimney and it works pretty well, though a little finicky with the thin air here in Denver at 5800 ft.
What really works is a propane torch. I light off the charcoal in my offset smoker in about 4 or 5 minutes and off it goes. I do not lose all that heat from...
I have used a small offset smoker for lots of years. There is a little writeup on my modifications that might be of interest. I write it for Backwoods Magazine, although they never published it. Good luck. You will get lots of really good food.
Yes. Keep in mind if you put meat in a heated area, it will cook. you just need to follow temp. I put a grating over the charcoal and smoke and crisp skin all the time.
Can send more in a couple of weeks when cast on broken wrist comes off.

Gary S, I am also in Denver in the Ken Caryl area far west. We can share experiences. I have a small New Braunfels offset and love it. In fact, I have some chicken thighs on it right now. Got to use a good day like today, January 11. Cliff
Agree about fibrous insulation around food. I covered my small offset smoker with house insulation, but sheathed it is galvanized sheet metal. The sheathing went a lot better than expected and the improvement in reduced charcoal use, more even temperature distribution, and less sensitivity to...

Gr0uch0, I have tried to attach a copy of the pdf to this reply. Contact me at [email protected] if this does not work. Worked_the_World (Cliff Farris). Good luck.
Here is a slightly different design I used on another offset smoker. I cut strips of metal about 3.5 inches wide (and a few 2 inches wide). They are supported on angle iron rails I screwed to each side of the cooking chamber. I move these back and forth to control where the smoke and heat...
fpmich, some mods have done pretty well for me. No, this amount of effort is probably not justified but it has given me about 10 years of entertainment and some really good meat. Things are now at the point that variations in meat are more important than variations in the smoker. I have a...
Kryton,
Forgot to mention that people have used welding blankets too. Also, a grill shop had a Traeger Grill they used for demonstration that had a fiberglass blanket around the outside, well smoked up, that had a Traeger logo on it. You are on the right track.

Kryton,
Insulation works real well. I had some 3" Johns-Manville house fiberglass insulation left over and used it on my smoker. Worked like a champ. The internal temperature difference went from 120 F down to about 30 F and the charcoal use dropped by 2/3. The ash buildup also dropped by...
Put a sheet of wax paper over the red high temperature sealer when it is wet. You can close the door to form a tight seal without the sealer sticking. After a day or so, peel the wax paper off and you are off to the races. Good luck.
Mine looks very close in design except for the smoke stack. Mine exits from the end and yours from the back. The important thing is for it to exit below the level of the meat.
Hi TheBig1. A New Braunfels smoker pretty similar to yours has made my family a lot of really good BBQ. This is after some learning and failures though. There is a little write up attached which talkes about the modifications I have made over the years. Good luck with yours. Let me know how...
Bri5565,
I bought just this smoker about 10 years ago for $79 at the end of the season. After lots of mods, it has and makes real good barbecue for my family. We have come to really appreciate it. I have attached a write up on modifications made over several years. Look it over and post...
Wowmiata,
Your mods sound right. I'm an engineer too and got a small New Braunfels offset about 10 years ago for $79. There is a writeup of the mods made over the years that is attached. These were just as much for fun and challenge as for efficiently smoking.
The smoker really turns...
