Have you inspected the terminals of the heater this is the single most common failure point.

It was a tuff choice as someone on Craigs list in St Louis has a model 2 only ask $175 and willing to come down.

It is time to upgrade smokers from a MES30 we are trying to decide between a Smokn-it 2 and 3.
We are thinking of getting the 3 but the 21inch depth has me wondering about ease of accessibility.
Will we use the extra depth reaching thru seems like something I am unlikely to do?

They call back and explained they when ever they are out of stock that model will not be displayed on the site. The model 3 with analog control should be back in stock in about 6 weeks.
I will have to wait or pony up for the digital model.

For your unit to be safe please.
1 Be sure the metal cabinet of the smoker and your control unit are both grounded. (Its job is to prevent electrical shocks! A good ground will safely carry away stray voltage should any component or your wiring fail in an unsafe way)

To my ear the facts are 16 pounds of injected meat whose temperature was in the danger zone (over 45° under 140°) for close to 6 hours.
This is a choice you will have to make for yourself.

In St Louis I like Sugarfire Smoke house. If you are bypassing St Louis from 70 or 55, St Charles location is not far out of your way. From 64 Olivette or Winghaven are on your way. Go down Town if you want to see the arch and pay to park.

My guess is with such a small membership the budget got very tight and the liability insurance was one of the necessary cuts so the only way to protect them is to limit public access.

My MES is too old to help you with the first few questions.
Question #5 most MES over shout about 20 to 30° then they settles in to + or -10° of the set point.
Note most MES temperate probes are inaccurate. Run a test and find out if yours is high or low and by how much.

I agree when you control when the temperature is very tightly controlled there is a good chance the heating element will never be energized long to get hot enough to burn the wood chips.
Most PID will have settings for how tight the temp is controlled.

110°C = 230°F is almost warm enough to suit me. But I want to be close to 300°F.

The only way to make tuff Q is to cook it to hot and or not long enough.
