Isn't that what the Pitmaster is supposed to do? I'll look at the instructions again but I thought they said not to use any other bottom vent because it can't regulate the temp like it should.
I just got the PitmasterIQ for my UDS. I run it with a Weber kettle lid with the vent fully open. Vents on the UDS are kept closed. In the firebox I use a layer of Kingsford hickory charcoal with either oak or hickory chunks on top. All lit with crumpled newspaper.

I'm just used to smoking at that temp. Granted, I haven't done a larger bird like this, just a small fryer (besides pulled pork and ribs). I see what your saying. Thank you!
This is also the first time using the weber lid I got for my UDS. Should be interesting.

I just found an almost 6 lb pork butt in my freezer that I was saving up to smoke and forgot about. It's dated 2 years ago. It was wrapped really well in plastic wrap and a zip-top bag and shows NO signs of freezer burn.
Should I go ahead and smoke it?

Wow. I really wasn't expecting this to be such a controversial subject, but thanks for the information and opinions. So, a couple of days ago a shopping cart showed up in my garage. I am told they had the OK of the store Director to take it :)

The coating is what I'm concerned about also. According to the show "How It's Made" they are made of steel, dipped in nickel and coated with chrome.
I'm not sure whether I'd use them for the food grates or not, but I think I'd be fine for the basket after heating up in a nice HOT HOT HOT fire?
My daughter's boyfriend came up with the idea of cutting up an old grocery cart for grates. They work at a local grocery store, lol!! I don't know what grocery carts are made of or what they may be coated with or how they'll hold up to heat.
Has anybody thought of/used this idea? I don't know...
