    I had some last week. Fried them up and shook in BBQ sauce. Very good, like pulled pork on a bone.

    Brisket - Hot & Fast

    I did one last weekend. Injected, and rubbed, smoked till 165, then put it in a aluminum pan, covered with foil, pulled off at 195. Had smoker set at 375. It took around 4 hours. Came out very good. Havent decided if we are going to do them this way for comps yet. Doing a butt the same way tomorrow.

    I tend to get around a 8 to 10 hour burn in my UDS. What type of set up do you have for your coals.

    Yes it will hold them, i've had 4 one mine before. If you have a tent or some sort of cover to put the drum under to keep it out of the rain.
