My sensor was bad right out of the box, called GMG replacement was here within a few days. I've had the grill since April and have cooked on it 2-4 times per week since then including some overnighter a with butts or brisket. It has worked flawlessly since the sensor replacement.
So I smoked a boneless fully cooked ham yesterday, pulled it and forgot the damn thing on the counter for 5 hours! Is it shot or do the nitrates and high salt content preserve it?
What is the best way to add smoke to a bbq sauce? I don't really like the taste of liquid smoke so looking for other options. Would it be possible to cold smoke a bbq sauce in a foil pan? I also understand some folks use drippings, I assume this decreases shelf life?

Brisket just got put into cooler, butts are sitting at the dang stall, hoping to power through or else I'll wrap shortly. Also threw on a breakfast fatty and transferred everything to gmg since I'll be running around the next few hours.
Just fired up the wsm with brisket and the gmg for butts! Overnighting it for tomorrow, once I pull the butts corn on the cob will take its place til chow time! Happy 4th everyone!

The water bowl is tinfoiled to make clean up easier. Just replace the foil instead of scrubbing the mess out. I personally fill my waterbowl with sand and place a terra pot on top wrapped in foil. It's all a personal preference.
