Cooked these up last weekend on my Stumps Baby. Cook ribs at 275F for approx 3 hours until you get the color you want then wrap in foil and add beef consume and 1/2 pint of beer. Cook for another 2.5-3 hours or until they're reading about 200F-203F between the bones. These are not the tough ribs...
Cooked this bird up last week. My friends have been bugging me about beer can chicken and I keep telling them I don't cook chicken that way anymore. Hope you enjoy the video. Just used cavendars greek seasoning and some plowboys yardbird during the cook.

Yeah I actually bought that smoker off a good friend. He used a pink stretch and the pink baby. Started doing all his meats in the stretch for comps and no longer needed the baby. Couldn't change the color.
Hey here's a video we made last weekend. Stuffed these with pimiento cheese. Really nice treat. Next time I might glaze them or do a bacon weave. The cheese was surprisingly good with the jalapeño and hot pork sausage.
Thanks a bunch. Yeah the caribou was a little bull but it was my first one so I'm glad I put meat in the freezer. My buddy that came out here to visit from CO ended up shooting a 52" bull moose. We ended up splitting all the meat so my chest freezers are pretty full. We'll be eating well.
