The pork shoulders were still on sale a few days ago so I went and grabbed another 66 pounds. We made another 36 pounds of Italian sausage to refill the freezer after the holidays. Going to make 20 pounds of Facett's breakfast sausage tomorrow and cut a few steaks off the last shoulder and make...
Going to vac seal. Planning on letting a couple pounds go for 5-6 years. The longest I've done so far is 3 years before I broke down and ate it. Tasted great.
Caught a good sale on pork butts. Grabbed 68 pounds. My wife, grandson and I made 54 pounds of our family sausage. My grandson is 11 now and been helping Papa for 7 years now. He's becoming a great sausage maker and meat cutter. He can process a deer as good as anyone I know.
Go to Bear's step by step index. Scroll down to his Double smoked spiral cut ham. It is amazing. You won't be disappointed. https://www.smokingmeatforums.com/threads/bears-step-by-step-index.159333/
I smoke mine at temps between 35 and 60. Never had a problem. I'm picking up 40 pounds tomorrow for the holiday gifts and snacking. Going to be perfect temps here. weather said 44 degrees. 42 degrees will work great.
Thanks for the replies everyone. I am going to order20 pounds of pellets from Smokin Pellets. Pecan is the family favorite, but I also have 8 or 9 different woods to play with.
I'm looking for some bulk 100% pecan pellets. I'm running low from a big purchase from Todd some years ago. I found Smokin Pecan pellets 1oo%. Has anybody used them in an AMAZN tray? Pecan is my favorite pellet, but it is getting hard to find the pure stuff. Open to any other brands. 20 pound...
All I find on their web site are 3 meter extensions. However they are only good for 140 degrees. They will not help me. Thanks for the reply. I will just look for another brand of multi probe thermometer with long leads if one exists. I have another smoker the Thermopro should work in.
I have a thermopro 4 probe Bluetooth thermometer. I love it, but I need longer probe leads for it. 60" would be good. Is there a source for longer compatible probes anywhere?
Thanks for all the likes and comments everyone. We had a ball, both catching and eating. The smiles on the kid's faces when they catch a fish big or small are genuine.
Been a while since we have had a fish fry due to some health problems that kept me down for a while. Yesterday, my brother called to invite me and my grandson to go fishing. We jumped at the chance. My grandson loves fishing even more than I did at 11. We weren't out too long due to the heat...
About 5 years ago, the wind took the trampoline at my daughter's house, carried it 40 yards and stuck it to the house. The support legs came apart and acted like spears. The new one has enough anchors on it I don't think a tornado would move it.
It just came over the news a community 40 miles...
I did two 7.5 pork butts today. I usually do the low and slow overnight cooks, but the last two times were hot and fast. As others said, no difference in the end results. I ran 280 degrees and they took 8 hours to hit 200 and probe tender. I also used Jeff's Texas style rub instead of his rib...
Defiantly looks good. I bet a half of Habenaro or Scorpion pepper dropped in each bottle would be amazing. Going to try a batch when bean season kicks in here.
