Yep the fan did the trick. I'll be using it from now on for my cold smokes with pellets.

And sealed up. It will be nice to have cheese in the fridge for Christmas. Next batch will go in when there is another sale.

So everything was going great until I found out a 9 volt battery will only power the fan for 90 minutes. I ran inside and grabbed this old cell phone charger that outputs 5volt DC and cannibalized it. We are back in business!

I did have one relight about 20 minutes in but so far it's working well for the last hour. The MES can smoke cheese while I smoke this cigar!

I vac seal half racks and throw them in the freezer. If I want ribs for dinner, I throw a few half racks in a small crock pot with a cup of apple juice around noon and set it to low. Seems to work great for me.

Here's the smaller butt after an hour rest in the oven. I did end up turning my oven on to the keep warm setting.
And here is the first one pulled. I noticed no difference in moisture. My rub usually loses some of its flavor when I foil...not so going this route.

Yeah, quit looking at it. If you're lookin' you aint cookin'. Were you able to get your temp up to the 225-240 range? If so relax...just keep an eye on your temps.
Do you know what your rack level temp is? You want to keep things between 220-240 if possible. In my experience, most boston butts I've smoked tend to stall in the 150-160 range. I've had them hang at 150 for two hours before finally breaking that stall. I wouldn't expect 140 in three hours is...

I just smoked some butts from Sam's Club this weekend. IBP Brand...cryovac sealed 2 to a pack. They turned out great. If you have a Menards near you, they sell Famous Dave's Rib Rub in shaker bottles...a couple of those would work for you.
