I don't have any thoughts on it for you, but that really is great looking ground beef! It ought to put store bought to total shame.

Guess I'll wander over to Safeway tomorrow and pick up a couple more packages of those chops.

    W-D pork stew meat.

Holy cow, you made out like a bandit! I'd probably have gone out of the store with a couple more of those bags. And I appreciate Chop's comment about grinding up a few slices of bacon if it seems too lean. I ground up a pack of pork loin chops for sausage the other day, and it came out drier...

    Hakka Buffalo Chopper

I agree; I had a horizontal manual Hakka stuffer for years and gave it to a friend last Fall. My new 7-pound vertical arrives today.

    Hakka Buffalo Chopper

What a great run-down, very informative. It sounds really out of my league, so I guess, for myself, the LEM grinder and Hakka stuffer that I already have will do. I agree with Ryan, you need one, and let us know how it works!

    Lost my NOLA Andouille recipe....

And I'll convert to percentages too; someone on here long ago had a post on how to figure them; math was never my strong point, but his post made it easy. Can't wait for the local Super One to have their annual pork sale, Prairie Fresh brand is always as fresh as it gets.
