It seems to me that all of you have gone to great lengths to make these smokers work. Aren't there smokers on the market, obviously more expensive, that would work with out all of these changes?
Flax Oil seasoning Great way to go, but I cleaned the old pans by running them through the cleaning cycle in my oven. Took my shop vac to clean the oven.
I grill my salmon on the indirect side of my Weber with water trays under the salmon and alder in a container on the heated side. I keep the temp on the indirect side around 225 degrees. Takes about 1 1/2 hours for the fillet to reach an internal temp of 135 degrees. I usually place a little...

Love my cast iron pans, and am going to follow your technique. Never thought of using the clean cycle in the oven. I use the oven cleaning cycle for cleaning my grill grates.
I have a Weber Genesis and use the 18 inch tube smoker and by using the Maverick ET-732 set can keep the temp between 225 and 240 degrees on the indirect side. I also place two water filled aluminum under the grates on the indirect side. The only time I don't use the tube is when I prepare...
My favorite to smoke is Tillamook pepper jack. I tried some inexpensive cheese on time and it was a waste of time. All of the above suggestions are right on.
Buy "Jeff's Naked Rub" Recipe". Once you get the recipe you can make copies and give it to all of your friends. I double the recipe and have plenty. You will need to dry the brown sugar or the rub is lumpy. I dry it by using a cookie sheet in the convection oven, about 175 degrees, for 20...
