    Longer Thermopro leads

Thermoworks sells 2' extensions. I have a Smoke-X and use them on my old Cimarron. i simply run all the wires down the stack instead of pinching them in the 1/4" door.

What Oklahoma Joe's model smoker is this?

You are going to find it is probably 3/16 or a little less. The problem those had was the ash pan allowed air to get sucked in whether you wanted it or not. I cannot remember what it was called (Deluxe?) but believe it was made somewhere around 2004-2006 . Filling the ash pan with firebrick or...

    Oklahoma Joe's Canyon Smoker

Make sure that the fire bricks in the cook chamber are not blocking any air flow from the fire box. I have 2, 20 year old plus offsets and you just have to sit and try different things. I do changes / adjustments while cooking a pork butt because you can't really hurt it and the pit will...

OK I Admit It - I'm a Coffee Snob. Who Else??

I drank my first cup of coffee around the age of 6 back in 1958. My father was an Englishman that despised tea and drank Maxwell house continuously. I drank stove-top percolated coffee until joining the Navy where until going to sea had to get used to mega mass made brews. Once on sea duty in...

    Wood cost in your area

A few miles from my house is a company that provides seasoned and green wood for BBQ joints and restaurants in AL/GA. The wood is in 18 & 24" lengths, palletized, wrapped and delivered. They sell the pieces under 18" for .12 to .14 per pound. They keep pretty good sized piles that you can pick...

Learning to use an older Brinkmanns Smoke'nPit - baffle or tuning plates?

If there is a major difference between left and right which there probably is, you can put a water pan against the CC/FB bulkhead and see what happens. Mine works best with the pan about an inch off it.

    Greetings from Ohio

Welcome from Alabama! I will retire if my IRA & 401(k) ever quit hemorrhaging. Early morning coffee to start the cook, cold beer when it feels right & bourbon after are a tough combination to beat.

    Trouble with PitBoss Savannah

I purchased a Savannah a few weeks ago. I had to get my son's help getting the bottom shelf/legs together. If my arms were a few feet longer it would have been easier. Also, one of the screw inserts was loose in the box so I replaced it with a nut & bolt.

    Fire management help

Ben - I hope it helps. My offset had some draft issues, especially on very humid days and in Alabama that happens quite often. My smoker came with stack a 3" wide & 19" vertical rise. I now have 4" pipe with 34" rise. It works much better although on days with little wind and high humidity I...

    Fire management help

Have you run the dimensions of your unit thru an online BBQ Calculator to figure smoke stack length? It appears in the picture like the stack is jointed. If so, what happens if you take the top section off? You can try substituting, cheap 4" hot water vent pipe or a roll of roof flashing...

    Offset smoker tips

The whole thing with an offset is fire management. I cook with the firebox door and the exhaust damper wide open, letting the smoker set the pace. On windy days I do close the FB door a bit to keep ash from blowing into the CC. Build a good hot fire on a grate about 2-4" above the bottom of the...

Check out this email about how to identify an original OKJ unit.

I have one of the units like in your picture. It is a New Braunfels Oklahoma Joe Longhorn. Mine is made entirely of 3/16" steel, solid and heavy. The firebox is bolted onto the cook chamber however it has never leaked at the joint. The CC lid also seals well. It was purchased it from Academy...

Favorite widely available bourbon or whiskey

Go to brand is Old Forester 100 proof, same mash bill as Woodford Reserve but not distilled in copper and made in bulk. At around $25 a fifth it is hard to beat for the price. If and when it is available, Buffalo Trace.

    Looking to upgrade

The second rack is big enough for butts and brisket. I purchased my Savannah last week and am cooking a 8.7 pound butt tomorrow on the second rack. If that goes well I will do a brisket the following weekend. The top rack will probably be good as a small warmer or for cooking vegetables. I am...

    Afterlife

When two people cannot agree on the same point, one of of them is wrong or both of them are wrong, they cannot both be right. A true belief has to be justified as true or it is just conjecture.

    Looking to upgrade

Check out the Pit Boss Savannah. It is a new model that is sold by Walmart. The three racks add up to 1500 square inches. It is 579.00 not including tax, tag, title & dealer prep. It has a PID controller with 5 degree increments but does not have Bluetooth or WI-FI

Outside of meat dries out very fast on offset

I have an older Oklahoma Joe with a 40" cook chamber and always use a water pan placed on the grate just above the opening from the fire box. I also live in a climate that has a little extra humidity in the air and therefore in my splits. I cook between 250 & 275 on pretty much everything which...

    Chain Bbq restaurants.

noboundaries, I agree 100%. Those old 2 lane highway, family owned and operated places have pretty much disappeared from the American landscape. Beginning with the growth of the interstate system then on to fast food a lot has changed since I grew up in the 50's & 60's.
