    I also agree, the BBQGuru eyelets are most useful...I am super glad I bought them for my WSM...I still use one probe in the top vent, yes it can be a pain to remove everytime I take the lid off..but I have found this to be the best way for me.... :)

    One other thing...make sure you line your pan with Aluminum foil...for easy clean up... :) Again Congrats on your new WSM...I can't believe you finished all these mods soooooooo quickly.

    Chad, You don't have to drill holes for the handles...you use the existing holes that hold your upper and lower grates, just take the top and bottom bolts out and put handle on...and repeat on the opposite side.. I bought these handles at home depot they fit perfectly no alteration needed..see...

    When I am done with a cook...I wrapped the meat in foil and put blankets around that and then into my cooler....you can leave it in there for hours...and it will stay warm.....putting it in the oven...I believe the meat continued to cook...that is why it's DRY...as for adding water...I just used...

    Yes, the smoker will last 12 hours on a cook...but you will be able to cook, let's say pork butts in 8 hours...instead of 12, because of the radiant heat. When your done, put on a couple of Beer can chickens to use up the leftover coals..... :D I haven't done ribs yet but I know the jumbo can...
