Well as much sucess as I've had with ribs on my MGS30 since christmas this winter, it was time for a good friday fish smoke.
Brined in 1 cup salt, 2 cups brown sugar for 90 min.
2 hours under the fan for the pelicle to form... now into the smoker.
The only thing I'm not real happy about, is...
Well... Had a bunch of people over to enjoy this brisket, but unfortunately I'm going on nearly 13hrs now. Stalled at 156... Not gonna make it for feeding everyone especially if I have to give it a good rest.

Well my family was kind enough to get me a MGS 30 for x-mas.
Put the MGS together this morning, and it had a stripped/wrong insert for one of the rear legs...
No problem... nothing a 1/4" tap and an old 727 torqueflite transmission pan bolt and two #10 self tappers couldn't fix.
