I have an old ge fridge converted to a smoker. I used the oven controls and burner from an old range out of a motor home and mounted the stove right on the side of the fridge works good.

I just loaded up the smoker with four 12 lb turkeys for some folks down the road and just like last winter if you fire up the smoker it will start snowing.

Dutch, I have been told I am smoking an 11 lb standing rib roast for the day before Christmas. I haven't done much beef yet and I am not sure how much time to plan on. I will be cooking it at about 225 degrees and it has to be served at 1:00 pm. Do you hav any suggestions?
