@Lamar I'm considering doing the same thing. I've never worked with metal, was it easy to cut the pieces and install them? Any rec. on what type of sheet metal I buy? Also..have you noticed enough of a difference to make it worth the time?
Has anybody done anything about building a wind break? I'm considering buying some sheet metal and attaching to the side legs and across the back. I'll leave the front untouched. Any thoughts?

I'm interested in smoking chicken for the first time. Typically when I prep beef, I let it sit in its rub all night. Most recipes that I've found that us a brine say to brine 3-4 hours. Will it hurt anything if I let it brine for 7+ hours? I'm considering putting it in the brine in the AM...
@fuzzy0026 The valve above should work fine for what you need. Just be prepared to go to the hardware store to get some extra fittings. It took me about 10 minutes to assemble.
Just wanted to follow up. I ended up going with just the needle valve and used some extra pieces to get it to fit. I didn't find any negative posts about the regulator in line with the hose, but I found WAY more people who were excited about the valve so I decided to play it safe.
