Loosing temps now. Smoker temp still the same, big went up to 165 stayed there for about 30-40 ,ims and then dropped to 163. The small ine wnt up to 179 for about the same amiunt of time and now dropped down to 177

I have never foiled. I have not had meat that has been foiled but have not because I thought the results are exactly as you are explaining.
I love the meat with the bark. I even get a little bark on my ribs without foiling.

If you are looking for a good rub and sauce you should look into buying Jeff's recipes. I bough them a few weeks ago and love them. I will probably never buy a sauce from the store again. My kids even love the sauce. My olds puts it on what seems like everything.

Here is the finished product. Smoked them for 5 hours with hickory, apple and a little oak. Used Jeff's rub and sauce (which I really like) They were, juicy tender and still had just the right amount of tug when bit into. Enjoy the pictures
