    Cold Smoked Pork Skin Question

Cold smoked a 15 lb. Pork Belly on Friday with an Amaze-N- Pellet Smoker in my XL BGE. I've got about 2 lb. of cold smoked skin. Besides just freezing it for cooking flavor, is there anything edible to make with the smoked skin? I've seen some recipes where you cook unsmoked skin in a pressure...

Brisket - Smoke one day and oven the next?

Right back at smoking temp. --about 220 to 225 if i have the time. If not, up as far as 325, but watch your temps carefully with a good thermometer. I let brisket go to about 190 deg.

    I can make it rain!

Well, there you go. After my whining and complaining, guess who got an emergency call in to work? So the ribs are still in the fridge. But at least I got them skinned and rubbed, and now I don't know when they're gonna get into that smoker since my normal work schedule for the weekend is whacked...

    I can make it rain!

It's past, thanks,@ Bear. And I'll get the ribs on soon. I draw the line on thunderstorms, though, since two years ago my next door neighbor was hit by lightening in my yard (we're on the top of a hill). Wasn't pretty. He survived, though, and has a nasty scar on his shoulder. Good suggestions...

    I can make it rain!

No dancing, no chants, all I have to do is THINK about building a fire in the Outlaw SFB (aka The Beast) and bingo, RAIN!!! Here I just called my favorite butcher to see if he had a few racks of pork ribs squirreled away ( his big delivery is Thursday) cause I figured I had time to give them a...

BBQ Pulled Pork with full Qview. Cooking Momma is back!

NICE job! Glad you're feeling better too. I was just about to have some breakfast, and somehow, now, after looking at your pix, oatmeal seems like such a sad choice. Your pictures make me want some of that pulled pork...sigh!  Bet it was delicious!

Cinderella has met her Prince: Prime Brisket Q-View

Just read through all the replies, and I'm blushing. Y'all say such nice stuff to a girl. Thanks...and it was delicious, too. Ribs are on the agenda next, for Friday maybe, and a new camera battery, too, so I can post pictures.  I've been reading here every morning for inspiration. Such good cooks!

Cinderella has met her Prince: Prime Brisket Q-View

$12.95 /pound was the price of the prime steaks at Costco. I bought my prime packer briskets at a high-falutin' local butcher for $4.99 /pound. Still, it came to $110. for two briskets, and I'm used to paying about $1.99/pound for choice. Good thing there's leftovers in the freezer. I hid them...

Bellies are not just for bacon!! First try at confit! With Q-view!! Money shot!!!!!

I need to keep an eye on what you are up to, each step of the way. I just found two #7 pieces of pork belly in the back of my basement freezer that I put in there over the Christmas holidays when I ran out of time to work on them. I make duck confit a couple of times a year,  but never...

Brisket - Smoke one day and oven the next?

It works fine for most BBQ meats. I've done it when I have big groups coming and have other cooking and set-up tasks to do and can't babysit the smoker. Also do it when the weather for the day of the event is supposed to be craptastic. What I do, though is pull them somewhere between 140 and...

Cinderella has met her Prince: Prime Brisket Q-View

Did you foil? I think that speeds things up a bit. I don't know if being Prime, the extra marbling of fat made them cook any faster, I wonder if internal fat carries heat any faster? Where's Alton Brown when you need him?  hese finished up a bit faster than usual too, because I had to do the...

Ever see a little tiny smoker called a "Smoking Gun"?

They guy in the store fired it up to show the women, and my first thought was, "OMG, a bong" --Yep, I'm a Boomer, lol. And the $24 wood smoking material, well, you could grind chips in a blender, but it looks suspiciously like what's left in the bottom of my bags of hickory and mesquite chunks.

Ever see a little tiny smoker called a "Smoking Gun"?

The man was suggesting you could smoke already cooked shrimp for an appetizer, of a cooked steak during it's resting time. You wouldn't get that rich smoked taste from long term smoking, but it would maybe be more like a smoke seasoning sort of thing. Local chocolatier is supposedly using cherry...

Ever see a little tiny smoker called a "Smoking Gun"?

I was standing in a kitchenware store in a local mall, and a guy was selling this item to two women. They bought one each at $100. Looks like a fun toy, and I could think of some things to use it on, but, geez. More money than brains, maybe. Here's the actual website...
