I cringe about using tons of garlic salt with your brine. The garlic salt seasonings are loaded with salt.I might try this recipe but maybe with garlic powder. Any comments.
I ahve seen a few tv shows where the chef's are using eye of round which look very lean. Does anyone smoke them on the forum ? I am handicapped so using the smoker is a chore but I can manage ok.

Bearcarver, what is the proportion of ingredients to weight ? The only salmon I can get in so cal is filets from Costco which I guess are 2-3 lbs. I'd probably use half for smoking to start with.
