I need an instapot that will boil 40 lbs at a time LOL somne of those big Mississippi goobers will take 5 hrs of boiling and another 4 - 5 hours of soaking to get soft and to soak up seasoning.
Do them like we do crawfish and crabs . Lay wet burlap sacks or towels on top and set a bag or two of ice on top to keep them cool. If your not in a truck you can pot them in ice chest.

As someone who has been using MES smokers since they hit the market i can solve your problem. get you the AMNPS . once you have that . pull the chip loader out of the unit and put it up somewhere. . Use the pellet tray for smoke and the MES for heat . The hole where the chip loader was allows...
