    I'm not Dutch . But i make a whole bunch of these beans. weather it be timings or pork butt ,i put everything into the pan at the start. Just make sure that when you stir them while smoking to make sure the meat is not floating on the surface.

    I need an instapot that will boil 40 lbs at a time LOL somne of those big Mississippi goobers will take 5 hrs of boiling and another 4 - 5 hours of soaking to get soft and to soak up seasoning.

    Do them like we do crawfish and crabs . Lay wet burlap sacks or towels on top and set a bag or two of ice on top to keep them cool. If your not in a truck you can pot them in ice chest.

    I boil a few 40 lb sacks each year. at least one wit crab boil and one just salt I freeze them in quart zip lock bags no water . nothing added and they last me through Mardi Gras (feb. / Mar. ) the next year. So 7 months + with no prob;em.

    If you up size to 2 #10 cans and 5x everything in the recipe you will come out with 80 + 3 oz servings. so it should be enough for side dishy for 100 .

    Smoke some water for a few hours stirring every 30 min. Bottle this and then freeze it in your Ice trays. Excellent in both a good bourbon and bloody marys.

    As someone who has been using MES smokers since they hit the market i can solve your problem. get you the AMNPS . once you have that . pull the chip loader out of the unit and put it up somewhere. . Use the pellet tray for smoke and the MES for heat . The hole where the chip loader was allows...
