Finally got the pork butts done

I went with hickory. I did a a lot of smoking on my old Weber Kettle and I have always been partial to hickory on pork. Although I know my dad does a hickory/oak combo that works well also

Finally got the pork butts done

So, still learning how to smoke on my off set I recently got. Have posted a couple times on here when I cured it and and when I did a chicken. First smoke on my offset OK Joe

Hey all. Was able to do cook on my new offset a little bit ago and just got around to posting it. It is an OK Joe Highland and the only "mod I have done is a charcoal basket out of expanded steel. Did a beer butt chicken that turned out pretty good. According to the temp probes I put in the...

    Seasoning the new smoker

Finally got to season the new offset yesterday. The only "mods" I did to this were making a charcoal basket and turning the fire box grate 90 degrees. With my kettle I would use a full chimney of carcoal to start out. Already learned I cant do that since my cook chamber got to like 450. The...

    Hey all from Missouri

Another question about the Oklahoma Joe's Highland firebox

So here is the deal. I know this has been asked and all the threads I read tend to give me a different answer so I wanted to though this out there. I bought An OJ Highland lastnight online and am waiting for it to be delivered. 2 things I want to do during assembly is the seal the 2 halves on...
