    Brisket and New York loin are both select. Got the loin for 3.25 a pound and added even more pork belly then in the pic. 40 pound batch yielded 25.5 pounds or so of pepperoni, have about 145$ into it casing included so did pretty good lol

    Probably depends on the brisket. Just cut one up a little bit ago and it was lean so I added more pork belly then I planed. I’m making brisket and New York roast into pepperoni and came out leaner then I though so I added about 7-8 pounds total. Was going to just add 4 pounds. Got the new York...

    The saw horses are level in both directions and the wood rails are level also so the router will make the wood flat. Just need to take a palm sander to the wood after the router sled, that’s madrone I cut little over 2 years ago on the horses , works good for smoking too, burns really hot

    Got in 25% off so picked it up and smoked it yesterday in 11 hours at 250. Light trim, hit it with salt, pepper and garlic and used red oak and just let it do its thing with nothing but heat and time in the smoker.

    Let us know how the grinder works as a stuffer. It will be a lot of extra time and kinda hard on the grinder because that fine stuff ain’t as lubricated as the whole chunks or first grind stuff and has a lot of air in it. The auger likes to be lubricated or mine starts making a funny noise
