You gotta be careful with using air. It compresses so you could potentially blow your whole deal apart. I'm having trouble keeping all the water sealed. Maybe a tbsp worth leaks through and messes up my last bit of sausage. Maybe should try the air. Anyone know if CO2 if the same as air as...

Do you mean convert a hand grinder to electric or make one completely from scratch? Easiest thing would be to get a #22 off eBay and hook a washing machine motor to it. Could use a jack shaft to get the rpm right if needed.
I liked it. Tasted kinda salty if you fry it til it's crisp. Fry it just a little bit and it tastes like a ham. Goes great on a burger tho. Got a belly in the freezer I'm gonna do next.
Here's a shot of my first try at some buckboard bacon. Used Tenderquick with brown sugar and some maple syrup thrown in. Can't really taste the maple tho.

So it's been a month and I'm still not "done". It's running though. Did some snack sticks after seasoning a bit.
